A hétvégén ráadásul vendégünk jött, aki kimondottam a gyümölcsös tortákat szereti.

A töltelék receptje:
• 250 g túró
• 400 ml habtejszín
• 1 citrom

Seldom do I follow a recipe verbatim, because I want the cake to reflect my personality, but now I had to make an exception, since I fell in love with the recipe of Szintia immediately. Moreover we had a guest for weekend, and she is a huge fan of fruitcakes. According to the original recipe I just made a few changes: I made a creamy cottage cheese filling with forest fruits.

There is a new function in my blog as well. I was planning to translate my posts to English as well, but due to the lack of time, I could not do it so far. However I received a comment in English to my latest post, and that gave me a burst - why not? ^^ Earlier posts will be translated as well... soon :P Until that time, I have translated the recipe to English - enjoy!

Ingredients:

For the pastry
• 6 eggs
• 6 tablespoon of sugar
• 1 cup oil
• 1 pinch of salt
• 5 tablespoons of flour
• 1 tablespoon of cocoa powder
• 2 tablespoon of rum

Filling:
• Raspberry jam
• 250 g cottage cheese
• 400 ml heavy cream (e.g. Dr. Oetker’s Hulala)
• 1 lemon
• a bit of gelatine/ or cream fix

• seasonal fruits

1. Preheat the oven to 180 celsius. Lay a sheet of baking paper on the baking pan.
2. Beat the eggwhites.
3. Beat the eggyolk with the sugar and salt, then pour the oil to it. Pour this cream to the beaten eggwhites
gradually, then stir it gently.
4. Divide this cream into 2 halves: to one half add the cocoa powder and the rum. Leave the other half "yellow" (you can add vanilla sugar to it, just like I did).
5. Put the two different creams into 2 different pastry bags (or you can just eyeball it, when layering on the baking pan). Push one "stripe" of yellow pastry on the pan, then a brown, then a yellow again until you reach the other side of the pan :)

6. Bake it for ca. 30 minutes.
7. When ready, roll it up horizontally and let it cool down in the same position.

Preparing the cream:
8. Beat the heavy cream, then add the cottage cheese, a teaspoon of lemon juice and half of a lemon's grated peel. (If it is not sweet enough you can add some powdered sugar, but I like it a bit sour). You can add a bit of gelatine for a firmer result.

9. After the pastry has cooled down, roll it out, remove the baking paper and grease it with some fruit jam of your choice. Then roll the pastry back and slice to ca. 1 cm thick slices.
10. Cover a bowl with foil, and line its sides and bottom with the pastry slices. Fill it with the prepared cream and fruits and slice some leftover pastry slices on the top. Leave it in the fridge for overnight.
11. Before serving turn it upside down on a plate and peel off the foil.
