Mont Blanc/Mont Blanc cookies

Nagyon szeretem azokat a sütiket, amik lehetőleg kevés adalékanyagot tartalmaznak. Pocak Pannától pont egy ilyet kölcsönöztem. Ő valójában a paleo étrendet követi, én csak annyiban változtattam a receptjén, hogy kakaópor helyett kókuszt használtam díszítésnek, a tésztába pedig dió helyett darált mandulát tettem.

I love those cookies that have no artificial component in it (or very low amount). I have borrowed this recipe from Pocak Panna, who follows the paleo diet, but this recipe can be good for everyone. I changed it only by substituting walnut with ground almonds and cocoa powder with ground coconut.




Íme a recept 12 darabhoz:                                             Ingredients for 12:
diós/mandulás piskótához:                                            for the pastry
6 tojás                                                                           6 eggs
8 e.k. víz                                                                       8 tablespoons of water
20 dkg dió/mandula                                                       200g ground walnut/almond
1 t.k. szódabikarbóna                                                    1 tablespoons of baking soda
1 e.k. méz                                                                     1 tablespoon of honey

gesztenyés sapkákhoz:                                                   for the chestnut hats:
500g gesztenyepüré                                                      500g chestnut puree
3 dl kókuszolaj                                                             300 ml coconut oil
1 dl víz                                                                        100 ml water
6 e.k. rum                                                                    6 tablespoons of rum
1 rúd vanília                                                                 1 vanilla stick
2 e.k. méz                                                                   2 tablespoons of honey
2 érett banán                                                               2 ripe bananas



A tojássárgákat felverjük 4 e.k. vízzel és mézzel, és a fehérjét is külön felverjük 4 e.k. vízzel (magas, szellős habot kell kapjunk).  Óvatosan összekeverjük a két habot. A darált diót/mandulát összekeverjük a szódabikarbónával, és óvatosan a tojáshabhoz keverjük. Sütőpapírral kibélelt tepsiben 180°C-on 20 percig sütjük.
A gesztenyepürét kikeverjük a rummal, vaníliával, mézzel és kókuszolajjal. Hűtőbe tesszük. 
A kihűlt piskótából tenyérnyi korongokat szaggatunk. A két banánt összetörjük, mindegyik piskótakorongra halmozunk egy kanállal, majd nyomózsákba töltjük a gesztenyepürét és a banánkupacra halmozzuk.Kakaóporral vagy kókuszreszelékkel díszítjük.

Beat the eggyolks with 4 tablespoons of water and the honey. Beat the eggwhites seperately with another 4 tablespoons of water. You'll get a very fluffy, tall foam. Gently mix the two foams together. Add the baking soda to the ground walnut/almond, and gently mix it with the eggfoams. Bake it in the owen on 180 degrees for 20 minutes (use baking sheet under the cream!).
Mix the chestnut puree with the rum, vanilla, honey and coconut oil. Put it in the fridge, until the pastry is ready. When the pastry has cooled down, with a cookie maker which is approx. the size of your palm, make small "disks" of it. Mash the bananas and layer about a tablespoon amount on each of the "disks". Put the chestnut cream in a pastry bag and decorate your "disks" with it. Sprinkle with cocoa powder or ground coconut.

Rumos-csokis körtepite / Pear-pie with rum and chocolate

Jön a körte-szezon! Bár én a lédús, nagy körtéket jobban kedvelem, ezeket a kicsiket sem akartam veszni hagyni. Rendhagyó módon körtepite készült belőlük, amihez nagyon jól passzol a holland kakaó enyhén kesernyés aromája egy kis rummal megspékelve. 

Its time for pears! Soon all gardens will be full of them. Although I prefer the bigger, juicy ones, but I did not want to waste these small ones either. A bit of rum and dutch cocoa suits them well!



Hozzávalók a tésztához:                                    Ingredients for the pastry:
25 dkg liszt                                                       250 g flour
15 dkg hideg vaj                                               150 g cold butter (unsalted)
4 dkg kristálycukor                                            40 g sugar
2 e.k. víz                                                           2 tablepoons of cold water
só                                                                     salt

A töltelékhez:                                                    For the filling:

2-3 nagyobb, vagy 8-10 kisebb körte                  2-3 bigger, or 8-10 smaller pears  
4 e.k. holland kakaó                                           4 tablespoons of dutch cocoa
fél citrom leve                                                    half of a lemon's juice
6 dkg kristálycukor                                             60 g sugar
2 e.k. rum, vagy rumaroma (az előbbi jobb:)        2 tablespoons of rum



A tészta hozzávalóit összegyúrjuk (ha nagyon ragad, még tehetünk hozzá lisztet). Lefóliázva 1 órát pihentetjük a hűtőben, majd elfelezzük, és kilisztezett deszkán kinyújtjuk őket. Nyújtófa segítségével egy kivajazott piteformába helyezzük a tészta egyik felét. 

A töltelékhez megpucoljuk, kicsumázzuk és kis kockákra vágjuk a körtéket, megszórjuk a kakaóval, cukorral, végül meglocsoljuk a citromlével és a  rummal. Rárétegezzük a tészta másik felét. 

Mix the ingeriennts for the pastry, then wrap it in a foil and let it cool for an hour in the fridge. Then seperate it into 2 pieces, roll them out on a bit of flour. Place one half in a pie pan. 

For the filling, peel off the pears' skin, slice them up into small pieces. Sprinkle with the cocoa and sugar, pour the lemon juice and rum on it, and finally place the other half of the pastry on top.



Tetszés szerint díszítem, a közepén mindenképp hagyok egy lyukat (itt szívecske alakút), hogy a gőz kellően átjárja és a körték vajpuhára párolódjanak. Végül egy tojást felverek és ezzel kenem meg a pite tetejét, hogy szép fényes legyen. 180 C-os sütőben 40-45 perc alatt arany színűre sütöm.

Finally I decorate the pie as I like, but it is important to leave a hole on its top, to help the steam evaporate which will soften the pears. I beat one egg up and grease the top of the pie with it, so it can get a nice shine after baking. In a preheated oven (180 degrees) I bake it for 40-45 minutes or until the top becomes golden brown.

Torta a tenger "gyümölcseivel" / Seafruit cake

Ezt a tortát egy barátnőm kapta ajándékba, akinek februárban volt a szülinapja. Ciki, tudom, de a költözés miatt nem volt időm felköszönteni, viszont úgy gondoltam, akkor már egy igazi, jó nagy, személyre szabott tortával lepem meg. Nagyon szereti a tengert, ezért egy ilyen témát képzeltem el számára. Gondos tervezgetésemet 2 nappal ezelőtt egy telefonhívás szakította félbe: barátnőm hívott, hogy csütörtökön jó lenne neki a találka. Ahogy letettem a telefont, beugrott: a torta! 6 óra körül estem haza szokás szerint a munkából. Összekevertem egy tömörebb, faragható piskótát, hogy bírja az emelet súlyát, és miközben sült, gyorsan körbenéztem mi található otthon.

This cake is the present for one of my friends, whose birthday was in February actually O.o. Yeah, I know... but because of the moving to the new flat, I did not have the time to celebrate it with her properly. Therefore I thought I would bake her a big, personalized cake, on the theme: the sea, which is her favourite holiday place :) My careful plannings were interrupted two days ago, when my friend called and told me that she can meet me on tuesday... No sooner did I realize that I have to bake a cake, when I put down the phone. I arrived home from work at 6 p.m., then fastly mixed a pound cake, and while it was having its "holiday" in the oven, I looked around in the kitchen for ingredients.



Klasszikus csokis-tejszínes krémet készítettem végül, amit megfejeltem némi rumba áztatott anyum-féle befőttmeggyel. Piskóta elkészül, csalódottság, lapos. Kutyasétáltatás közben fél 9-kor boltba beugrik, vesz alapanyagokat még egy piskótához... Új piskóta kész... 3 fele vág, anyu-féle meggyes-epres lekvárral és a krémmel váltakozva megken, pillecukor fondant este 10-kor elkezd... Egy montázskészítővel összeraktam pár képet több szögből :)

The filling is a classical chocolate cream, loosened with some heavy cream. My mum preserved a bottle of sour cherries, so I let them swim a bit in a cup of good rum, then added it to the cream. The pound cake was unfortunately too flat, so I had to go to the shop for new ingredients (at 9 p.m, whilst taking the dog for a walk). After the new pastry was ready I cut it into 3 layers. The first had some cherry-strawberry marmelade on it (my mum's own product! :), the second the chocolate-cherry cream, the next the marmelade again, and so on alternately...  I started to make the marshmallow fondant at 10 p.m. finally... Here you can see... These photos I have assembled together with a collage maker programme...


A fenti kalandok után már nem volt energiám vajkrémet készíteni, ezért ugyanazzal a lekvárral kentem meg a burkolás alatt a tortát. A díszeket másnap készítettem el, végül megszórtam darált keksszel, hogy a homokos partot is belevigyem a témába kicsit. A tetejére levegőbuborékokból az ünnepelt neve (Gina) került.

After the adventures mentioned above I did not have energy for making buttercream (I wanted to make it fresh), so under the fondant I have put the same marmelade. The small creatures were made the next day, then I sprinkled the cake with some ground biscuits to give it a "sandy" look. To the top I glued some "air bubbles" which spell the name of the birthday girl (Gina).

Tiramisu ahogy anyum készíti / My mum's fine tiramisu

Hogy pontosabb legyek, hamis tiramisu, mivel nem használtam fel hozzá nyers tojást - valahogy nincs túl nagy bizodalmam benne. Ettől függetlenül, ez az a tiramisu íz, amit a legjobban megszoktam és szerintem egy olasz sem utasítaná vissza, csak azért mert nincs benne a tojás ;)

More specifically, a "fake" tiramishu, since I did not use any raw eggs - I don't trust them :) Yet this is the tiramishu taste I got used to and I suppose even a true italian would not reject it, just because it does not include the eggs :)




Íme a hozzávalók és az elkészítés: 

  • 250 g mascarpone
  • 2 dl habtejszín
  • 3 e.k. kristálycukor
  • 2 dl tej
  • 1 cs. vaníliás cukor vagy egy vaníliarúd
  • 1 cs. babapiskóta
  • 3 e.k. rum vagy konyak
  • holland kakaó megszórni a tetejét 
A mascarponét a kétféle cukorral  kikeverjük (ha vaníliarudat használjuk, akkor csak a belsejét kaparjuk ki). Külön tálban a habtejszínből kemény habot verünk, majd összekeverjük a mascarponéval. 
Lefőzünk egy jó erős presszókávét (neszkávé vagy porkávé nem túl jó választás), majd ha már langyosra hűlt, a tejjel, ízlés szerint egy kis cukorral és rummal elkeverjük. Ebbe forgatjuk bele gyorsan a babapiskótákat (egyszerre elég annyi, amennyi a tál alsó rétegéhez kell, hogy ne ázzon el túlságosan a babapiskóta).
Egy jénai tálba vagy tepsibe elkészítjük a rétegeket: először egy réteg babapiskóta, majd a krém fele, újabb réteg babapiskóta és a tetején a krém másik fele következik. Hűtőbe tesszük legalább egy órára, és tálalás előtt kakaóport szitálunk a tetejére. 

Ingredients and instructions:
  • 250 g of mascarpone
  • 200 ml heavy cream
  • 3 tablespoons of confectioner's sugar
  • 200 ml milk
  • 1 package of vanilla sugar or 1 vanilla stick
  • 1 package of ladyfingers
  • 3 tablespoons of rum or cognac
  • cocoa powder for sprinkling the top
Beat the mascarpone with the sugars (if you are using a vanilla stick instead of vanilla sugar, just use its inside). Beat the heavy cream in a seperate bowl.
Make a strong espresso (but do not use instant, that won't taste the same), then let it cool lukewarm. Then add the milk, a little sugar and the rum to it. To this liquid will the ladyfingers go. Just damp it a bit in the liquid quickly, otherwise the ladyfingers will swim :)
Take a pan and layer the ladyfingers on the bottom, then the half of the cream on it. Repeat it in the way, that the cream will be at the top. Let it cool in the fridge for an hour at least, and sprinkle it with cocoa powder before serving. 


Ezt a képet muszáj feltennem: itt próbálgattam fotózni a kész művet. A "lényeg" a jobb alsó sarokban jelent meg :)
